Their company name matches my domain, but with a country specific top level domain (.NL in this case). They do seem to be legitimately using the domain in their country.
As for my usage, the domain is my last name(.COM) and I'm only really using it for email. I'm not really that attached to it other than the hassle of changing email addresses. There are other flavors of the domain available (.US for example) that would suit my purposes just fine.
So, Slashdot veterans, I ask you, what should I do? I'm leery of making an offer and falling into someone's legal trap. I wouldn't mind getting a chunk of cash out of the deal though."

if you're not looking to make a profit, i'm sure you can make various requests and suggestions for how to accomplish the domain transfer...
if your happy to change to another top level domain (i.e. *.us), have the dutch requester register that domain, and subsequently transfer the domain to you. once the *.us domain has been transferred, you should do the same and transfer the *.com domain they are requesting to them in a timely fashion.

I had the same thing happen about 6 years ago. I was (legit) using a.com name that a company wanted. I told them that I was using the domain and had no desire to sell it and that the amount to buy out my existing use of it was $12k (Thinking they would never go for such a high number and I wouldn't have to worry about it.)
Two Days later there was a contract and a check. I registered the.net and went on with my business (aside from changing some html files and business cards,..no big deal.)
